Here’s a delicious Chicken and Vegetable Stir-Fry recipe that’s quick, healthy, and packed with flavor:

Ingredient

For the stir-fry:

  • 2 tablespoons vegetable oil (e.g., canola or olive oil)
  • 1 lb (450g) chicken breast or thighs, cut into bite-sized pieces
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium zucchini, sliced into half-moons
  • 1 cup broccoli florets
  • 1 medium carrot, julienned or thinly sliced
  • 3 garlic cloves, minced
  • 1 inch fresh ginger, grated (optional)
  • 2 green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (optional garnish)

For the stir-fry sauce:

  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
  • 1 teaspoon rice vinegar or white vinegar
  • 1/4 teaspoon red chili flakes (optional, for heat)

Instructions

  1. Prepare the sauce:
In a small bowl, whisk together soy sauce, honey, sesame oil, rice vinegar, and chili flakes. Set aside.
  2. Cook the chicken:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until golden and cooked through, about 5–7 minutes. Remove the chicken and set aside.
  3. Cook the vegetables:
In the same pan, heat the remaining 1 tablespoon of oil. Add the garlic and ginger, sautéing for about 30 seconds until fragrant. Add the carrots and broccoli first, cooking for 2–3 minutes. Then add the bell peppers and zucchini, cooking for another 3–4 minutes until all vegetables are tender-crisp.
  4. Combine everything:
Return the cooked chicken to the pan with the vegetables. Pour the sauce over the chicken and veggies, stirring to coat everything evenly. Let it simmer for 1–2 minutes.
  5. Thicken the sauce:
Stir in the cornstarch-water mixture and cook for another minute until the sauce thickens and glazes the chicken and vegetables.
  6. Serve:
Garnish with chopped green onions and sesame seeds. Serve hot over steamed rice, noodles, or enjoy as is for a low-carb option.
